Kerala chicken curry



Recipe for Kerala style spicy chicken curry with coconut milk
Serves :- 2-3
Total cooking time :- 1 hour
Ingredients:-
Chicken - 1/2 kg
Bowl 1 :-To marinate chicken 
Kashmiri Chilli powder - 1 table spoon
Coriander powder- 2 tea spoon
Turmeric powder - 1/2 tsp
Crushed pepper-1/2 tea spoon
Salt to taste

Oil
Mustard seeds
Mace - 1 or Bay leaves - 1
Cardamom -2
Cloves - 3
Curry leaves
Onion chopped - 2
Green chilli split lengthwise - 3
Ginger - Garlic paste - 1 or 2 tea spoon
Garam Masala - 1 tea spoon
Thin Coconut milk - 1 cup
Thick coconut milk - 1/2 cup
Method:-
Clean and cut the chicken into medium pieces
Marinate the chicken with all in Bowl 1 :-To marinate chicken and keep aside for 15-30 minutes. 
Heat oil in a pan and add mustard seeds.when they pop up add the whole spices and fry for 30 seconds
Then add curry leaves and onion and sate till onion is soft , followed by ginger garlic paste. saute till brown. 
Add the marinated chicken pieces and combine well.
Stir fry the chicken pieces for 5-7 minutes.
Pour thin coconut milk ,mix it well.Add garam masala and  cook it covered on a medium flame until the chicken is tender
When it is done uncover and add thick coconut milk and simmer for 3 minutes,and remove before it boils.Granish with curry leaves
( Note:-Some who have tried this suggested the addition of tomato or any other souring agent . So if you want add 1 or 2 tomato or a tea spoon of vinegar or lemon juice)
