Carrot Pachadi

Ingredients:
Carrots- 2nos finely minced
Onion - 1 nos finely chopped
Ginger - finely chopped - a small piece
Green chillies - 4 split lengthwise
Yogurt 1 - 1/4 cup
Oil - 1 tablespoon + 1 tablespoon
Mustard seeds - 1/4 tea spoon
Dried red chilli - 2
Shallots chopped - 1 or 2
Curry leaves
Method
Heat oil in a pan and saute finley chopped onion,ginger and green chillies .Saute it well for a couple fo minutes.
Add finley minced carrots and saute it again for a couple of  minutes.
(I dont add usually grate carrots,cos,its tastes different.So i prefer to mince it with a knife)
Cook it in medium flame by adding a couple of tablespoons of  water.
When it is cooked remove from fire and let it cool .
Beat Yogurt with a pinch of salt and add to it and mix it well.
Heat oil in a pan and add mustard seeds,curry leaves.when it splutter add red chilli and shallots
Pour this over the carrot and combine it well!!

This is the same way we make it at home. I love to eat this with chapathis. Although it looks like a simple dish it's BIG on flavor and yours has such a pretty orange color.

I love pachidi, just than hubby and daughter don't like it, so i hardly every make. Wish i could grab that plate from my screen and enjoy with rice

I like the picture but the pachadi apears to me as pulishery...

It appears thick and I really feel it prepared for rice..but carrot pachadi.. that color... mm... I think thats the the one lacking...

is it probs with camera or...dish ka colour hi aisa hain??

I always say what it appears and whats true to me... no praising only the appearance...

I am open to both rants and raves Abhi...
Perceptions are always different rit,and so do what people make :)
I m real proud to say that my version looks like this and to be frank i have never had a pulissery that looks orangeish..., but yellowish!!!
I appreciate you for telling wat u feel like :)
I dont think my NIkon will ditch me ..heheheh

Girl,
I was thinking what to make for lunch for me and Ryan.Then i saw this Pachadi,liked it,so decided to give it a try.
Ryan just had a full plate of rice.he simply loved the colourful Pachadi and of course me too :-).Easy to make and all these ingredients would always be there in any household
Have reserved some for Eric :-)
by the way,i made your prawn-mango curry and was a hit ;-)
