Kerala Fried Chicken


Recipe for Kerala Style Fried Chicken
Ingredients:-
Chicken drumsticks - 3( you can use any piece you want)
Kashmiri Red chilli powder - 1 to 2 tea spoon ( as per the spice level)
Coriander powder - 1/2 to 1 tea spoon
Turmeric powder - 1/4 tsp
Pepper powder -1/4 tsp
Garam masala - 1/2 to 1 Tea spoon
Rice flour - 1 tsp(optional)
Ginger - garlic paste or crushed - 1 tsp
Lime juice - 1 tsp
Salt to taste
Oil
Method :-
Clean and pat dry the chicken pieces and make few slits on them with a knife, like we do in fish for frying
In a bowl mix all the powders , ginger garlic paste , lime juice and salt to make a paste.Add water if necessary 
Marinate the chicken with this paste and refrigerator it for 2 hours ( the more time you refrigerate the tastier the chicken will be)
Heat oil in a pan and deep fry the chicken pieces.( if you wanna shallow fry it make sure it is cooked well. cover it some time while frying)
Garnish it with onion rings

Anon..Oh you can bake it too..
Add a bit of soya sauce or wrstchr sauce to get the blackened look , and bake for 350 degree for an hour , then change to 425 and bake for 15 minutes. I do an occasional basting with the remaining marinade too :)

the cooking time changes of course ,add yogurt for the tandoori effect ... other than that, its almost similar :).

Sure,Hey frying is best i know but i really wont know when it is done,so should i go n bake only.Oh i know 15 will be gone in 15 secs.Or Should i fry,please suggest.

Anon, i dont fry this now a days , since I m so conscious about oil ...I say baking is good and if you want add a lil oil to the marinade ...I know what you are talking about the cooking time . I have had a bad experience of having a drumstick fry at a friends house and it was all red inside :(..But when you bake for an hour it will be well done..
Y dont you bake one or two today and see if you like it?

And if you are baking 15 make sure you keep that atleast in 2 baking trays , not crowding it ...and may be you will need to bake a bit more time too...

You don't have to add Rice flour Anon...while frying it gives a crispiness but i havent yet baked with it ..I am sorry that i forgot to tell you about it ;(...

Since you already did add it ...try like that ...its very little right ...a tea spoon...lets see how it turns ..Its really good when you fry it , and thats how you know they do in thattukada...so this time ,when you taste it if you do not like it ..omit it when you make it next time..

Sorry Sarah i really had no time to get back to u.
Really the chicken came 2 good, girl the baked option is so good then what will be the fried one.My guests were like wowed.They asked me and showed all the 2n4 comments on your blog.They were like u r crazy, i said trust her i have tried nearly 5 of her stuff and nothing went wrong for a new bee like me?

hey wht ever i tried is too good. so my trust is already built so if something goes wrong if i follow the recipe n tings go wrong,then is the picture fake,no?so when i know its not fake then i knowi wht i am trying has 2 good.But lot of external factors and kaipunniyam is there so no need to bail out.

Hey I'm really happy after trying this chicken fry masala, though I used to use the same masala for fish fry.
But I was not sure wat was used for chicken and as my wife was out of town and couldn't contact her instantly ,so thought of trying thru net ��
By the way I decided I will try other recipes thru this site and I thank Sarah for giving this ��recipe as it was really wonderful.
